White Chocolate Peppermint Fudge (Mom)

18 ounces white chocolate chips
1 can sweetened condensed milk
¼ cup unsalted butter, cut into pieces
1 teaspoon peppermint or vanilla extract
1 cup crushed peppermint candies, divided

Line a 8 inch baking pan with parchment paper, leaving 3 inches hanging over each side.

In a double boiler, place white chocolate chips, condensed milk and butter. Melt over low heat, stirring constantly. Remove from heat and add extract and ½ cup crushed peppermint candies.

Pour mixture into prepared pan and sprinkle remaining candies over.

Chill in refrigerator for at least 2 hours to overnight. Cut and serve!
